After Christmas, Pancake Day has to be one of my favourite holidays. Ok so it’s not technically a holiday but if I ever become PM you can bet your bottom dollar it would be one of my first acts- that and outlawing celery and making wearing crocs in public an offence but hey that’s not likely anytime soon. So while we may not get a whole day off to enjoy the fluffy little delights that are pancakes lucky for us they are so quick and easy to whip up you can still enjoy them on Pancake Day and any day really!
And because we not only love pancakes but gut health too we thought you might like to try our kefir pancakes recipe this year! You may not have thought of using kefir before but let me tell you- it is a GAME CHANGER. The batter essentially rises itself due to the naturally fermented kefir properties and so your pancakes turn out fluffy and airy with the perfect amount of crispiness on the outside. Trust us, once you have tried Yorlife pancakes you will not go back!
1 Pint Plain Kefir- Buy it here
4 tbsp Melted Butter
2 tbsp Sugar
450g Plain Flour
2 tsp Vanilla Extract
½ tspn Baking Soda
2 tsp Baking Powder
Pinch of Salt
4-5 tbsn Coking Oil
Fresh fruit/Icing Sugar/Peanut Butter/Anything you fancy really to finish
To make Yorlife kefir pancakes, whisk the eggs, sugar and vanilla in a mixing bowl. Next warm up the kefir slightly in a pan and add to the egg mixture. Pop in the melted butter and mix everything well.
In a separate bowl, mix together the flour, baking soda, baking powder and salt. Add them to the kefir and egg mixture. Quickly mix everything to combine, but avoid over mixing. If there are a few lumps left, don’t worry, they will disappear while cooking. Leave it to rest for 5-7 minutes.
The batter should be thick and resemble a consistency of thick yogurt.
Heat a frying with your preferred cooking oil over medium high heat. Place a tablespoon of batter into the pan (or use a fancy sqeezee bottle if you prefer) leaving space between pancakes. Switch the heat to low and cook until golden, turning once*
Serve with fresh fruit, a sprinkle of icing sugar or a drizzle of peanut butter or syrup- really you can finish these however you fancy- the weirder the better in our opinion and please do send us you Kefir pancake creations!!
